The tofu industry, as a key provider of plant-based protein, supports Indonesia’s food security but often causes environmental issues due to inefficient resource use and poor waste management. This study aims to improve productivity and environmental performance at UD XYZ using the Green Productivity (GP) method, combining Material Balance Diagram (MBD), Green Value Stream Mapping (GVSM), and Green Productivity Index (GPI). MBD showed a total input of 137,793 kg/month, product output of 108,680 kg, and waste of 29,113 kg. GVSM identified major waste in water (19,689 L/month), energy (298,051 kWh/month), and emissions (11,287 kg CO₂/month). The initial GPI was 9.07% with an Environmental Impact (EI) of 10.1 tons. After applying efficiency measures—reducing water (25%), energy (20%), solid waste (30%), and emissions (15%)—the EI dropped to 7.9 tons and GPI rose to 12.41% (a 28% increase). GP proved effective for sustainable tofu production in SMEs.
