Flower leather is a sweet food in the form of thin sheets made from flower essence.This study aims to explore the effect of CMC thickener concentration and butterfly pea flower type on the characteristics of leather flower. The research method used is a factorial Randomized Completely Block Design (RCBD). The first factor is the concentration of CMC, the second factor focuses on the characteristics of butterfly pea flower. The data obtained were analyzed using ANOVA, followed by the 5% BNJ test. The results of the study showed that the best treatment was obtained at a CMC concentration of 2% with dried butterfly pea flowers, which had a texture value of 50.58 N, color L 36.51, color a 5.00, color b 0.92, pH 5.93, water content 13.98, and anthocyanin 1. For organoleptic measurements, the color value was 3.00, aroma 3.10, taste 3.20, and texture 3.20.
