Design Planning of Fish Crackers Dough Mixing Machine Using Static Load Simulation Testing

Abstract

Fish crackers are a popular seafood snack in Indonesia, especially in Pasuruan Regency, which has high fisheries potential. However, the dough mixing process is still often done manually, leading to uneven results, inconsistent texture, and high labor use. To address this, an automatic dough mixer was developed using a 0.37 kW electric motor, a pulley–V-belt and sprocket chain transmission system, and a 50×50×3 mm profile elbow iron frame. The parts in contact with the dough are made of stainless steel for hygiene. Two design alternatives were created using a morphological chart, and Concept A was selected based  simulation in SolidWorks. Results showed a maximum stress of 14.224 MPa, displacement of 8.74 mm, and a safety factor of 13 under a 92 Nm load with 10 kg dough capacity, indicating the frame is safe. This innovation is expected to improve production efficiency and profitability for fish cracker SMEs in Bangil.
