Traditional salted fish drying in coastal areas depends on unpredictable weather, which can interrupt the process and reduce product quality. This study aims to design a standalone automated silver barb (Tawes) fish drying system using an Arduino Uno R3, focusing on hardware accuracy and operational stability. The system integrates a Load Cell sensor to measure real-time mass reduction and a DHT22 sensor to monitor temperature. Using a Research and Development (R&D) method with a quantitative experimental approach, hysteresis control maintains the drying chamber temperature at 44–46°C. Testing showed that the DHT22 achieved 99.76% average accuracy with a 0.24% error, while the Load Cell produced an average error below 1% for most test objects. Fish samples with initial masses of 25–180 g required 110–160 minutes of drying. The system automatically stopped when the target moisture content reached 40%, supporting compliance with Indonesian National Standard (SNI) 8273:2016 for dried salted fish.
