Indonesia has enormous marine potential, but fish is highly perishable due to its high water content, and traditional sun drying is often limited by unstable weather and temperatures (averaging 35°C). To overcome this, this research designed an IoT-based drying incubator using an ESP8266 microcontroller, equipped with a DHT22 sensor for accurate temperature and humidity monitoring, a relay to automatically control light as a heat source, and a fan for air circulation. Integrated with Telegram for real-time notifications, this device successfully produces higher and more stable temperatures (reaching 50°C), accelerating water evaporation and ensuring better quality dried fish compared to natural drying.
