Abstract

This study aims to design a prototype of an automatic cracker fryer based on the ESP32 microcontroller using the deep-frying method to assist small and medium-sized enterprises (SMEs). This innovation serves as a solution to the challenges of manual frying, such as the risk of workplace accidents and inconsistent product quality. The system integrates a thermocouple sensor for temperature monitoring, a stepper motor as the mechanical drive, and an LCD screen for real-time information. Using the Research and Development (R&D) method, test results showed high sensor accuracy with an average error of only 0.46%. The device’s performance is proven to be optimal at temperatures between 183°C and 186°C, where the rose crackers achieve their highest expansion rate of 128.57%. Overall, this device has been successfully developed and is capable of enabling a safer, more efficient production process while ensuring high and consistent cracker quality.
