Abstract

This study analyzes the effect of pulley diameter variation on the performance of a 5 kg bread dough mixer designed for lower cost and power consumption. A 135 W motor (5000 RPM) was used with pulley ratios of 1.5, 2, and 2.5 inches (38.1, 50.8, and 63.5 mm). Theoretical RPM was compared with measurements using a laser tachometer. Results show theoretical speeds of 3000–8333 RPM and actual speeds of 2875–8230 RPM. The 63.5–38.1 mm configuration produced the highest RPM (8230 RPM), while 38.1–63.5 mm produced the lowest (2875 RPM). Slip ranged from 1.24% to 6.48%, with the smallest in the 63.5–38.1 mm setup. Overall, pulley variation effectively controls RPM and improves efficiency of low-power mixers.
