Abstract

High water consumption in retort sterilization and drain water disposal highlight the need for an automated water reuse assessment system. This study develops a Mamdani fuzzy logic-based decision-making system to evaluate retort drain water reuse feasibility using turbidity, pH, and TDS parameters. The research employs a multi-parameter monitoring prototype with automated valve control and a fuzzy inference system comprising 27 rule bases with turbidity override mechanism. Experimental results demonstrate sensor accuracy below 1%, repeatability under 0.3%, and excellent linearity. Fuzzy logic evaluation achieves 100% decision accuracy versus manual calculations. Testing 30 drain water samples yields 26.67% reuse classification, 66.67% treatment, and 6.67% reject, achieving 93.33% water-saving potential. The system effectively improves water-use efficiency, reduces operational costs, and supports sustainable food processing practices.
